Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter, honey, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, and mix until smooth.
  4. In a separate bowl, combine the oats, flour, baking soda, cinnamon, and salt.
  5. Slowly add the dry ingredients to the wet ingredients and stir until well combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Let the cookies cool on a wire rack and enjoy!
