The difference between set (also called creamed or crystallized) honey and runny honey lies in their texture and the process of crystallization. Here’s why they differ:
- Set Honey (Crystallized Honey): This honey has undergone a process of crystallization, where glucose (one of the sugars in honey) forms crystals over time. Set honey is generally thicker, smoother, and has a more spreadable texture. This happens naturally as the glucose in the honey separates from the water content and crystallizes. Set honey may be created by deliberately controlling the crystallization process in a controlled setting to give it that smooth texture.
- Runny Honey: This honey has a higher proportion of fructose, which prevents it from crystallizing as quickly. Runny honey remains liquid at room temperature and is generally smoother, with a consistency similar to syrup. Some honey is specifically processed to prevent crystallization, maintaining its runny state.
Factors like temperature, flower variety, and processing methods influence whether honey remains runny or sets over time.
The most expensive honey in the world is Elvish Honey from Turkey. It is considered rare and incredibly expensive due to its unique harvesting process and the fact that it is found in caves that are difficult to access. The honey is made by bees that have collected nectar from flowers that are at the top of the mountain, and it’s only harvested once every few years.
